Our Head Chef Mr Nathan Emerson prepares the weekend’s specials ready for the Australia Day Long Weekend.

“We are lucky that we get such a great selection of fresh ingredients when we visit the Sydney markets and we have great relationships with our suppliers they are constantly looking out for new ingredients for us”. “The other day we picked up a tray of white figs which was used in a great special and today we have picked up some wonderfully fresh pink Snapper fillets”

Pan fried pink snapper fillets with angel hair pasta, asparagus,

peas, tomato concasse and a shellfish bisque.
