Warren & Cassandra Harvey
Warren & Cassandra Harvey have been farming exclusively, Sydney Rock Oysters for the last 25 years. Having grown up in the industry, they use only traditional oyster farming techniques & have an annual turnover of half a million oysters per year, which amazingly are all hand opened.
By only using traditional methods it ensures that the oysters grow to their full potential & maximises their creamy texture.
Farmed just outside of Woy Woy in the salty Brisbane Water, Warren & Cassandra’s oyster farm benefits from being one of the few oyster leases in Australia based at a tidal inlet.
With the Brisbane Waters being flushed twice a day this ensures their oysters are raised on the cleanest and freshest water possible.
The Reef have secured a section of Warren & Cassandra’s lease specifically to supply the restaurant with consistently fresh oysters daily.
